Arugula Shrimp Salad
This salad is both tasty, healthy, but a little bit on the time consuming side to create. However, it’s definitely worth your while as you enjoy the textures & flavors!

Ingredients
- 6 uncooked Shrimp
- Fresh Baby Arugula
- 5 crimini mushrooms, sliced
- 1/4th of a red onion, sliced
- 1 tsp of minced garlic
- 1 tsp of butter
- 3 tbsp of orange juice
- 1 tsp of lemon juice
- 6 slices of pear
- Gruyere cheese, grated
- 1 tsp of crushed red peppers
- 2 dashes of salt & pepper
- 2 tbsp of extra virgin olive oil
- Light vinaigrette
Cooking Instructions
1. In a medium saucepan on medium high heat, add 1 tsp of olive oil to it. Let it sit for a minute, add half the butter, & then add the mushrooms. Cook them until they are tender (2 minutes) & add them to a bowl of your arugula. Add half of the onions into your salad.
2. In the same saucepan, add the rest of the olive oil, remaining butter, & garlic to the pan over medium high heat. After 2 minutes, add the remaining half of onions. After the onions have browned a bit, add the shrimp to the pan with the lemon juice. Now add the orange juice, salt & pepper, & crushed red peppers. Cook until shrimp is evenly cooked.
3. Remove the shrimp & onions from the pan & place them on your salad. Throw out the remnants of the juices & add the grated cheese on top. Place the sliced pears around your salad. It is easier to enjoy the pears in your salad if you chop them. Serve with a light vinaigrette dressing. Enjoy!
