- 1 sprig of green onions (scallions), chopped
- 1 tbsp pistachios
- 1 tbsp slivered almonds
- 1 tbsp dried cherries
- 2 cups Spinach
- 1 Tbsp Feta cheese, crumbled
- Half an avocado, cubed
Raspberry Vinaigrette
- 3 Tbsp raspberry jam
- 1/4 cup extra virgin olive oil
- 2/3 cup balsamic vinegar or berry vinegar
- 1 tsp dried thyme
- 1 tsp honey
- pinch of salt
Instructions
- Wash all of the vegetables & mix together all of the ingredients in a bowl.
- In a separate bowl, combine the vinaigrette until homogenous. Store in an airtight container & refrigerate. Drizzle raspberry vinaigrette atop your salad.
