Sardines get a bad rap, I know, but these stinky fish are actually quite tasty. If you really can’t stomach them for XYZ reasons, then use smoked trout from a can instead! If you live near a Trader Joe’s, guess what? They have them & they’re fantastic. Even better than sardines because they’re boneless. Anyway, this recipe is a play on lox without all the carbs & calories you’d ingest with a bagel & cream cheese. Not a fan of Cambozola? No problem, substitute it with Neufchâtel, which is a great alternative to cream cheese. Otherwise, just spread with some light butter (absolutely not margarine, butter or the non-hydrogenated vegan butter) & you’re good to go! It’s a nutritious breakfast dish that goes great with a nice hot cup of joe or black tea (or pu’erh or maté).

Ingredients
- 2 slices whole wheat bread, lightly toasted
- 2 tsp Cambozola
- 2 tsp plain Greek yogurt
- 1/10 red onion, thinly sliced
- 1/2 lemon
- 1 can skinless & boneless sardines in oil
- 1 sprig fresh dill
Instructions
- 1. Spread the Cambozola on the lightly toasted slices of bread & then spread the yogurt.
- 2. Empty out the sardines in a small glass storage container & squeeze the lemon atop the sardines. Mix until sardines are evenly coated. Layer chunks of sardines on each slice, about half to one whole sardine per slice.
- 3. Lastly, sprinkle on some fresh dill on each slice of bread & toast for 5 minutes in your toaster oven. If there is no bread setting on your toaster oven, just set the degrees to 350º F.
Notes
- If you don’t like sardines, use canned smoked trout or herring! They’re both great alternatives to the more expensive lox & they’re also very sustainable fish. If you’re not a fan of fish in general…well why are you here, I don’t even…
