A vegan friendly recipe that will be a hit with anyone who loves steamed wontons. You can always bring water to a boil & dunk them in for a few minutes if you don’t have a steamer. It goes best with a sweet & sour dipping sauce rather than the ponzu sauce in the photo suggests.

Ingredients
- 1 cup edamame
- 1/2 cup fava beans
- 1/4 cup bean thread noodles
- 4 cloves garlic
- 2 tsp rice vinegar
- 1 Tbsp ponzu sauce
- 2 tsp sesame seeds
- 2 tsp sesame seed oil
- 5 sprigs cilantro
- 1/2 bundle enoki
- Square wonton wrappers
Instructions
- Soak the bean thread noodles in cold water for 10-20 minutes. Drain & add the noodles, edamame, fava (if using), garlic, vinegar, salt, ponzu sauce, sesame seeds, sesame oil, cilantro, & enoki into a food processor. Process for 1-2 minutes or until the mixture is finely processed.
- Spoon a teaspoon of the mixture onto the middle of a wonton wrapper & fold the dumpling. Set dumplings aside to be steamed or boiled.
- When mixture is completely used up, place the dumplings in a steamer in one layer, making sure that the dumplings aren’t touching one another. Steam for 10-15 minutes or until the dumplings are soft. If boiling, boil in a large pot of water for 5-8 minutes or until the wrapping is translucent & soft.
- Serve with ponzu sauce or a nice sweet & sour sauce.
