Toasted Lemony Sardines with Cambozola

Ingredients

  • 2 slices whole wheat bread, lightly toasted
  • 2 tsp Cambozola
  • 2 tsp plain Greek yogurt
  • 1/10 red onion, thinly sliced
  • 1/2 lemon
  • 1 can skinless & boneless sardines in oil
  • 1 sprig fresh dill

Instructions

  1. 1. Spread the Cambozola on the lightly toasted slices of bread & then spread the yogurt.
  2. 2. Empty out the sardines in a small glass storage container & squeeze the lemon atop the sardines. Mix until sardines are evenly coated. Layer chunks of sardines on each slice, about half to one whole sardine per slice.
  3. 3. Lastly, sprinkle on some fresh dill on each slice of bread & toast for 5 minutes in your toaster oven. If there is no bread setting on your toaster oven, just set the degrees to 350º F.

Notes

  • If you don’t like sardines, use canned smoked trout or herring! They’re both great alternatives to the more expensive lox & they’re also very sustainable fish. If you’re not a fan of fish in general…well why are you here, I don’t even…
