Ochazuke is one my go-to breakfast dishes because it’s so no-fuss. Just heat up some brown rice, genmaicha tea, & mix with some wakame ochazuke. Ochazuke is a Japanese dish consisting of green tea, rice, & various ingredients. It’s a simple dish, which utilizes green tea as its broth. This recipe is a great base recipe as you can build from it however you wish.

- 2 cups water
- 2 tsp loose leaf genmaicha
- 1/2 cup cooked brown rice
- 1 Tbsp wakame ochazuke (wakame + crushed rice crackers is a good substitute)
- 1 Tbsp ponzu or soy sauce
- 1 tsp ichimi togarashi
- 1 tsp black sesame seeds
- 1/4 small cucumber, halved lengthwise & sliced
- 1 green onion, chopped
Instructions
- 1. On medium high heat, bring water to about 180º F in a tea kettle or pot & pour over genmaicha in a teapot. Steep tea for 2 minutes.
- 2. Place rice, wakame ochazuke, ponzu, togarashi, sesame seeds, cucumber, & green onion in a small bowl.
- 3. When tea is done steeping, pour over rice & stir. Wait until the wakame fully expands to consume.
