After publishing over 50 recipes on TB, you’d think that as a breakfast lover, I’d have a bundle of breakfast recipes, but I don’t. Breakfast should be on the no-fuss side of things, especially when you’re on the go in the morning, but I think you weekend breakfasters will appreciate this dish. Many of you may be familiar with donburi, a Japanese rice bowl dish topped with meat of your choice. Oyakodon is a type of donburi in that it is characterized by its usage of egg, making it perfect for breakfast or brunch. My Tofu Oyakodon recipe is a medium fuss breakfast/brunch recipe, perfect for kitchen beginners. It’s easy, efficient, cheap, & delicious that it works as a great base recipe. Since you have to bake the tofu & you’ve got some dishes to wash, it’s kind of a medium fuss type of meal, but well worth it, I promise! Modify it to your own personal preferences because if you’ve never eaten oyakodon before, it’ll change your breakfast game. So what else is the fuss with this recipe? Chopping up onions & mixing an egg. You can handle that, right? Right? No one needs a doctorate to chop up some onions, so be more proactive & less lazy, GET CHOPPIN’!

Realistically, I shouldn’t be eating this much food in the morning. It really should just be one or the other, however it is Spring Break, therefore TREAT YOSELF. This is how obesity starts, by the way. Just thought everyone should know. Real talk though, Trader Joe’s sells some fantastic cereal. These Strawberry Yogurt O’s are probably my new favorite cereal. The random chunks of yogurt clusters scattered throughout every 3rd or 4th bite makes your breakfast just a wee bit more exciting. The juice is two notches beneath pouring sugar down your throat, so I’d recommend watering that down. Click the picture to see more pictures pop up at you.

To order delivery or to save money & make breakfast? That is my pathetic dilemma for this lazy Sunday morning, so I opted for eggs sunny-side-up–I realize one didn’t retain its circular shape, trust me, I was not pleased–with toast topped with butter, eggplant garlic spread (Trader Joe’s), wild arugula, & gouda cheese. On another note, can I just say that I’m really excited that it’s raining? Even though this weather generally makes people feel lazy, I’ve been pretty productive & it’s only 2 PM. Maybe it was my breakfast?
This year I’ve become incredibly disconnected with my domains, barely updating them while they sit around wasting money. I’m not able to pinpoint the exact reason why I’ve been so distant from the whole thing, but I think I’m slowly getting back into it. Seriously, maybe it was my breakfast, it was pretty good. Trader Joe’s knows how to make some delicious eggplant garlic spread. I’m pretty energized…so tempted to put my rain boots on & splash around like a duck. But what would my hot neighbors think? First world problems.
