Chasing Waterfalls: An Icelandic Journey

So, cool fun fact: I originally wrote this post last year on 12/25/2019 thinking I would post it within the week, but I guess things got away from me & I forgot about it. Posting it now though. Just half a year later. Here are some quick updates since December 2019.

  • Got 3 brand new roommates.
  • Added ads to my blog (I’m sorry), but I figured why not? Might make all of $1.00 off of ads if I’m lucky, but free is free.
  • I am currently a Product Manager for a small software development company.
  • I started playing The Sims again since the apocalypse/pandemic/Coronavirus to cope with shelter-in-place mandates.
  • I started making Sims 4 Let’s Plays for my YouTube channel. My last LPs were made 9 years ago. Holy cow.
  • Despite COVID-19 ruining everyone’s life, I’m thriving & I know I’m really fortunate to even say that.
  • Got a new laptop & camera since I turned 30 this year. #TreatYoself

It’s difficult to gauge exactly how meaningful or significant this year will actually be for me when considering one’s lifespan. I don’t know about you, but I’m hoping to live beyond 100, so how character-defining 2019 is unknown. Who really knows if my time in Iceland will matter to me when I’m living my best raisin life, retired in the French Alps or Tuscany? If our reality became similar to the world of the Netflix’s French Original Series Ad Vitam, then nothing that happened to me this year should really matter in the long run. In Ad Vitam, scientists developed a medical breakthrough allowing humans to live indefinitely by a process called “regeneration”. When we can live beyond 150, would a couple of years of hardship really be so unbearable? How much weight would we continue to give our problems? Would we feel less anxious about time passing? Would we take one another for granted even more than we already do?

Even if we won’t see regeneration in our lifetime, we know the average age of life expectancy is increasing. Yet, our human nature permits negativity to frequent our thoughts, filling our minds with anxiety, stress, and toxicity no matter the triviality. No matter how long we live, our time on this little blue dot is limited. Unfortunately for many of us, we haven’t evolved to become emotionally unaffected by hardships that will soon be forgotten. How many times must we tell ourselves, “this too shall pass,” to console ourselves?

Happy Holidays!

Surprise! Thought you’d seen the last of me, but I’m still here. I want to quickly wish everyone seasons greetings & a very merry Christmas. Happy holidays to all of you & your loved ones. So much has happened since my last post, so let’s do a quick recap, shall we? This is really more for me than it is for anyone else. I’m holding onto this blog for as long as possible. Marie Kondo says if it doesn’t give you joy, then you should let it go. My blog still brings me joy, so…I’ll never let go, Jack. I’ll. Never. Let. Go.
  • I had a full-time job & I got promoted.
  • I got accepted to Boston University’s School of Public Health to pursue an MPH.
  • I got rejected from Harvard’s & cried a little. The audacity!!!
  • I moved to a new apartment in Cambridge.
  • I started graduated school & became a full-time student.
  • I wanted to work part-time, but apparently that wasn’t an option for me.
  • I left my job; actively looking for a part-time job.
  • Paying for benefits when you’re unemployed is really expensive.
  • I screwed up my sleep schedule, so now I quietly celebrate whenever I go to bed before 3 AM.
  • I started seeing a therapist to improve my mental health & I’m not ashamed to admit that. More people should. Depression is not a joke. Shout out to BU for free mental health services.
One of my roommates really liked my green bean casserole, so I might add a new recipe before the year is over. Don’t hold your breath though.

Heyyyyy girl heyyy. It’s been a minute, I’m very well aware. I wonder how many times I’m going to start my posts with some sort of apology & a haphazard explanation for my absence. Probably forever until the Zombie Apocalypse hits to be honest, but let’s hope it doesn’t get to that. But in case any of you need a safe haven for food, my house in California is stocked for the next 2 years for about 6 people. Shout out to my mom for being a hoarder. Why would anyone need 7 bottles of fish sauce? I don’t know, man, don’t question an Asian mother who finds a good sale. Not exactly down with the 2nd amendment though, so don’t come here thinking you’re going to find guns to defend yourselves. Plenty of great Global knives though. Should I invest in a katana? Maybe. Enough of my aside, let’s get to the point of this post. It’s Friday & I’m hanging out with my fam in California. Instead of working on things for my future, I’m editing pictures from months/years ago. When are you ever going to see my cousin’s wedding photos? I don’t know, check back in 3 years. For now, y’all can salivate over these photos of food my friends & I ate while we were in Montreal for my birthday this year! Pretty sure editing these photos just inspired me to plan another trip to Montreal next year when the Biodome is open.

Upgraded French Onion Soup

Cool fun fact: I’ve always had a recipe for French Onion Soup, but it suuUuUuuUuuck3d. Here’s hoping no one ever made it, but if you did (why??), my dude, I apologize. So, I’ve decided to update my outdated recipe with a brand new one. Look how it sparkles with my cute mini Le Creuset cocettes! HAVE YOU EVER SEEN ANYTHING SO CUTE? Yeah, don’t answer that, of course, you have. I probably should’ve posted a more summer-friendly recipe because who wants to eat piping hot soup right now? Well, you know what? I live in New England & this damn region doesn’t obey the laws of seasons. Seasons are light suggestions. Calendar says it’s summer? EL OH EL, try again. New England says it’s still autumn so it’s cold & raining, but tomorrow it’ll be hot, humid, & thundering. Drunk seasons are fun! Yay! (Help me).

Let’s Get Spicy

Since it’s a new year, I’m going to start making some changes around here, slowly, but surely. I’ve got a lot on my plate, I assure you it’s not as crunchable or delicious as the Trader Joe’s Quinoa & Black Bean Infused Tortilla chips seen in the above photo, so it could take a long time. Maybe I’ll take an entire year again? HOPEFULLY KIDDING. The Winter Games have been incredible to watch & as a former figure skater, they’re my favorite Olympics. Seeing the Scandinavian countries crush the slopes, but beaten by the French in skating & the Biathlon had my Boston fam & me on the edge of our $200 bargain Crate & Barrel couch. Incredible feats of skill & athleticism. I may not be pregnant, but I definitely know what kind of dreams I have for my future progeny: QUALIFY FOR THE OLYMPICS OR YOU’LL BRING GREAT DISHONOR TO OUR FAMILY. Just kidding, kind of.

So, even though the Olympics are over, the next time a major televised event happens & you feel like hosting a small or large group gathering around a large–or small, whatever, no judgement–screen of pixels, you can whip out your homemade tomatillo salsa, paired nicely with all the tortilla chips.
