Forget Green Eggs & Ham, Let’s Eat Green Pancakes

October 17, 2015 // Posted in Breakfast, Food I Made, Photo Journal, Recipes

It’s October, not St. Patrick’s Day, I know, but I couldn’t resist DAVIDsTEA’s limited edition Pumpkin Pie Matcha, which is what made my pancakes green. I bought 2.5 oz of it thinking that would be a good amount & after making these pancakes, I bought more the next day. I couldn’t resist. I’m that person who loves pumpkin, but to be fair, I love all squash! The shaming of people who love pumpkin flavored things has become so mainstream that it’s now trendy to bully someone who loves autumnal flavors. I can’t tell you how many times people come into work, ask about our pumpkin flavored teas, & then apologize for being that person. Stop apologizing!!! I don’t apologize for being obsessed with sushi or chocolate, why should you apologize for being obsessed with an orange seasonal squash?! Madness, I tell you. /pumpkin rant.

Let’s talk more about matcha because not everyone’s heard of it & let’s face it, green is the new black. That’s right all you black tea lovers, green tea is getting its righteous revival–& I’m not even referencing Selena Gomez’s new album, but there, now I’ve plugged it because it’s pop royalty. Green tea was actually the first tea to be discovered, but black tea was made popular by the British, especially since it fared the journey from China to the UK much better than green tea. Green tea has fantastic health benefits (antioxidants, longevity, antibacterial properties, etc) & although it has a significantly shorter shelf-life than black tea (1 year-ish vs. several years), it’s making its comeback. While black tea is the most popular tea and makes up about 80% of the sales in the West, matcha is changing the game. So imagine a whole pound of beautiful Japanese green tea that has been pulverized & that’s what matcha is: powdered green tea. It’s not artificially colored, it’s just that beautiful & green. Not only are you reaping all the benefits of green tea, but you are now actually consuming entire tea leaves. Amazing, right?

Tea Time Thursdays: Pumpkin Edition

Just in time for Halloween, Tea Time Thursdays gets an added layer of sweetness in the form of pumpkin chocolatey goodness. Guess where this inspiration came from? Pinterest. I have this love/hate relationship with Pinterest – the photos I pin from my own website barely get any pins, but when more popular pinners pin my photo, well, my site gets a flurry of views, but no new followers. I’m going to break this 1k follower barrier somewhere eventually! I’m looking at you, Instagram.

As I’ve mentioned previously, more pumpkin delights will be shoved in your eyeballs. Forgive my inappropriate coffee mug – I stupidly left my teacups at home, but they’ll be back in Boston with me in January. So, let’s dive right into pumpkin goodness.

Pumpkin Season, I’m Ready For You

For those of us on the Northern Hemisphere, many of us have anxiously awaited this spectacular 3 month span of this wonderful orange globular fruit to grace the aisles of our grocery store. This season is aptly named Pumpkin Season. It’s here. It’s at Starbucks. Pumpkins in all shapes & sizes are being stacked at our local farmers’ markets & I want to buy a little family of mini pumpkins to adorn my fireplace, but I really can’t justify the cost of doing so. For those of you who don’t really care all that much for pumpkin pie because there’s something wrong with you (if you’re allergic, I’m so sorry), I’ve added a new recipe for a savory Japanese inspired dish called Pumpkin Nabe with Soba. I can’t tell you how thankful I am to have gotten admitted into Northeastern this time of year, obviously for the academic part, but the location of the school is majestic. While California is sweating in a sweltering heat, I’m gearing up for Autumn & snow to follow soon after. Can y’all say, “cover photos for days” or what?! Hah, just kidding, totally hate Facebook. I’ll realistically have new desktop wallpapers for days.

The Products of “Stress Cooking”

Two-Cheese Pumpkin & Spinach Casserole. Click for more.

Most people procrastinate by surfing Reddit when they really need to do something, but don’t want to. Others play video games or stalk their friends on Facebook, but I procrastinate in a “productive”–sadly not an academically productive–way by feeding myself. Hi, I’m Tiffany & I’m addicted to “stress cooking”. While I should be studying for the dreaded MCAT (Medical College Admission Test), I often find myself in the kitchen, facing the pantry looking it up & down as if I were checking out Ryan Gosling. I tell myself I’m just looking for a snack, but I’m really just wasting time because I don’t want to feel defeated trying to figure out translational motion as its relevance to medicine is as relevant as twerking is to ballroom dancing.
