On That Latin Kick

Today, I’d like to share with you my delicious new recipe of Blackened Cocoa Fish Tacos, which has a fantastic mix of coffee & cocoa powder. Coffee infused with cocoa is also a great alternative to coffee + cocoa powder. After my nearly month old post on South American inspired recipes, I’ve found myself on a bit of Latin kick. While I haven’t explored much of Boston’s offerings–honestly I’ve been told that there’s not much to explore anyway, I mean we don’t even have Valentina or Tajin, you guys; the struggle is real–I love making my own Latin dishes whether it’s tacos, nachos, enchiladas, or mole. Seeeee, I don’t only eat sushi & various Asian food, gosh.

Lacey, one of my best friends who’s currently studying abroad in Sydney, took note of my absence on TB the other day. She knows I loathe Facebook, so I don’t update it, which means she doesn’t get updated on what I’m doing with my life unless it’s on my Instagram or I text her. Well Lacey & other curious/noisy people, I’m updating, so I hope you can handle it. You ready?? I’m ready.

Last month, my former roommate Gaby visited me in Boston. She had never been before & wanted to eat ALL THE THINGS. Not only did Gaby & I share a bedroom back at our days at UCLA, we also share very similar backgrounds. Both our fathers are physicians, our parents are immigrants, our cultures value family & good food, & obviously, we both grew up in Southern California. Aside from all that, Gaby is a delight to dine & travel around the city with. She’s up for anything & eats it all, raw, cooked, fermented, whatever! She has a much stronger aversion to fennel than I do, which makes pho–a very popular Vietnamese noodle soup–on her list of, “I wish I could like it, but it has fennel [seeds].” So while she was here, we avoided Vietnamese food because no one (besides Vietnam) does Vietnamese food like SoCal anyway & went for New England’s finest: clam chowder, lobster rolls, & oysters. Gaby didn’t get to try my tacos, she did get a bowl of my Bun Rieu, a delicious Vietnamese tomato & crab noodle soup that happens to both be our favorites. It’s my specialty Vietnamese soup & her favorite thing I make. I hear she’s paying me in a surprise package of Valentina & Tajin, so I’m really excited. La vida es mejor picante!! A fellow food blogger friend of mine, Daniela of Food Recipes HQ, said she really enjoyed seeing my travel photos–her food photography & travel photographs are also beautiful, so this is a huge compliment–& a fellow photo journal blogger buddy, Cat of Silent White, was inspired by my last Ma Belle Vie post, & made her own. I figured it was best to follow up my Mushroom Mapo Tofu recipe with another Ma Belle Vie post. For those of you who haven’t seen this before, “Ma Belle Vie” is a category of posts cataloguing my day in photographs from when I wake up until I go to bed. I forgot to take photos of our night, but I can assure you, Josh & I take dental hygiene seriously – rest assured, we did brush our teeth before sleeping, despite the lack of photographs to prove it.

Click the first photograph & use the arrows on the center left or right to navigate through our day. These photos were taken at the end of summer in August when I flew with Josh to help him settle into Florida. I’ll be back with a Vietnamese noodle recipe, wait & see!

Let’s welcome August with a noteworthy appetizer recipe & some other foodie pictures! I’m completely behind on editing & uploading all the pictures I have on my SD cards, so one of these days there’ll just be a post with a bunch of pictures & guess what? YOU’RE GONNA ENJOY IT…maybe. So, let’s talk about my new recipe that I obnoxiously named “Sensational”. Look, I can feel your eyeballs rolling out of your orbital fossa, but bear with me – the catchier the title, the more likely someone will check out the recipe. What makes this recipe so sensational? KEWPIE MAYO, duh, obvi, like srsly how is dat even a q?? In all seriousness doe, the combination of Kewpie mayonnaise, sesame oil, masago, & imitation crabmeat really bakes well atop New Zealand green mussels. The umami is strong with this one & I think that if you love shellfish, this is a great recipe for you to try out. It’s actually not too expensive to make given that you have sesame oil, ponzu sauce, sesame seeds, & Kewpie already. Who would have that already? People who love to make Japanese food, gosh. If you love Japanese food, invest in those ingredients; you’ll find that they are used in many recipes.

Huckleberry’s Pastrami Sandwich.

Well, this is embarrassing! My last post said this upcoming post would center around my trip to the Bahamas with Josh & my family, but I can’t upload the video onto my Vimeo account because I reached my quota this week, so I’ll just have to wait until Saturday for it to refresh. Regardless, the next post will absolutely be an explosion of pictures from the Bahamas that your eyes will be beached out for the day. Hopefully you enjoy this picture food dump post. If it makes you hungry, mission accomplished.

Remember how I dabble in gardening & making terrariums? No? Well, I do, so I made an instructional video on how to make beach themed terrariums except filming with one hand & trying to plant with the other produced deplorable results. What do you do with a bunch of movie clips on how to make terrariums that are poorly focused, unstable, & nearly nauseating to watch due to the amount of instability? Why, you throw them into Lightroom, edit the heck out of the colors, slap on some downtempo song, & boom, you’ve got yourself something semi-watchable.
