Ingredients

Salad

  • 1 sprig of green onions (scallions), chopped
  • 1 tbsp pistachios
  • 1 tbsp slivered almonds
  • 1 tbsp dried cherries
  • 2 cups Spinach
  • 1 Tbsp Feta cheese, crumbled
  • Half an avocado, cubed

Raspberry Vinaigrette

  • 3 Tbsp raspberry jam
  • 1/4 cup extra virgin olive oil
  • 2/3 cup balsamic vinegar or berry vinegar
  • 1 tsp dried thyme
  • 1 tsp honey
  • pinch of salt

Instructions

  1. Wash all of the vegetables & mix together all of the ingredients in a bowl.
  2. In a separate bowl, combine the vinaigrette until homogenous. Store in an airtight container & refrigerate. Drizzle raspberry vinaigrette atop your salad.
