Sesame Peanut Noodles

Ingredients

  • 1 serving whole wheat spaghetti or capellini
  • 2 heaping Tbsp smooth peanut butter (almond, cashew, or any other nut butter works perfectly too!)
  • 23 tsp sesame oil
  • 23 Tbsp ponzu sauce
  • 1/2 cup Persian or English cucumber, halved lengthwise & thinly sliced
  • 23 Tbsp fresh cilantro, roughly chopped
  • 23 sprigs mint
  • 23 shiitake, julienned
  • 2 sprigs green onions, chopped
  • 1 Tbsp salt
  • 23 tsp sesame seeds
  • 1 tsp ichimi togarashi (optional)
  • 12 lime wedges (optional)
  • 1 Tbsp Sriracha (optional)

Instructions

  1. 1. In a medium sized pot filled with water, add salt & bring to boil. When water begins to boil, add the pasta & cook uncovered for 7-8 minutes. Save about 1/4 cup of the water before draining the water. Place the pasta in an ice water bath to stop the cooking process or place the pasta in the freezer for two minutes. If you’re using fresh shiitake, add them whole into the boiling water to cook for 2-3 minutes. Remove them from the water & julienne.
  2. 2. In a medium sized mixing bowl, combine peanut butter, ponzu sauce, sesame oil, spices if desired, & stir well. Add a bit of the salt water from the pasta you saved to the sauce to get a desirable consistency. Add all of it to get a more runny sauce & add more peanut butter if a thicker sauce is desired.
  3. 3. Combine the pasta with the sauce, fresh herbs, cucumber, & shiitake. Top with sesame seeds. Serve warm or chilled.
