Parisian Inspired Pizza
You guys, do you ever wonder what a lovechild between a quiche & French onion soup would taste like…on a pizza? This. This is what it would taste like. I got my pizza dough & pizza sauce from Trader Joe’s. You’re more than encouraged to try your hand at making your own pizza dough & sauce, but if you’re pressed for time, just go for the pre-made doughs & sauces!

Pizza Base
- 1 whole-wheat pizza dough
- 2 cups pizza sauce
- 1 Tbsp olive oil
Pizza Toppings
- 1 Tbsp safflower oil
- 1 large onion, halved & sliced thinly horizontally
- pinch of salt
- 1/4 tsp freshly ground black pepper
- 4 garlic cloves, crushed
- 2 tsp herbs de Provence
- 1/2 cup sliced crimini mushroom
- 1.5 tsp Worcestershire sauce
- 1 tsp honey
- 2 eggs
- 1 cup grated Comté or any French cheese
Instructions
- Preheat your oven according to pizza dough package instructions. In my case, it was 475º F. Prep the pizza dough according to package instructions (letting the dough sit at room temperature for 30 minutes), making sure to spray down your pizza pan with cooking oil. Prepare your crust the way you’d like & dab or spray with olive oil.
- In a medium-sized pan, heat oil on medium & add onion, salt, pepper, & herbs de Provence. Caramelize onions, careful not to burn them; roughly 20 minutes.
- Add garlic, mushrooms, & Worcestershire sauce to the onions. Sauté until mushroom cooks thoroughly–about 5 minutes–& add honey. Set aside & allow to cool.
- In a separate mixing bowl, whisk together eggs & cheese. Mix in mushrooms & onions. The mixture should be chunky, not runny! Set aside.
- Scoop out the pizza sauce, spreading evenly across pizza dough. Layer on the chunky cheesy toppings. Bake for 10-15 minutes.
Notes
- I used pizza dough from Trader Joe’s, but you can find pre-packaged pizza dough from most grocery stores. I do encourage you to make your own if you have the time/skills/patience, but the pre-packaged pizza dough works just as well.
- Garnish with fresh thyme if you have any!
