Somen is a less popular Japanese noodle dish that is traditionally served cold, but you can enjoy it either way. Cold noodles are perfect for those particularly hot days & this recipe is significantly easier to prepare than other cold noodle dishes. You can think of somen as you would pasta salads, so you can add all sorts of vegetables to the dish as you wish. This is the perfect vegan/vegetarian dish given that the ponzu sauce you use is also vegan/vegetarian friendly!
