Vegan Sushi Roll
When I was making these last week, I was aiming for a vegetarian recipe because I was going to use honey instead of sugar in the sushi rice & add tobiko for garnish, but I realized I didn’t have any honey & I forgot to garnish the rolls with tobkko. However, it doesn’t mean you can’t at home if you’re obsessed with caviar or prefer the taste of honey over sugar. So I present to you a vegan recipe for sushi, cut rolls & a hand roll. You can mix it up with different combinations of vegetables & mushrooms, but I just used cucumber, sautéed enoki, & avocado. To make the roll slightly more healthy, I used brown rice.

If you were at a sushi restaurant & there was already eel sauce or ponzu sauce on your sushi & you tried to soak it in more sodium in the form of soy sauce, I’d slap away your chopsticks, but this sauce is made to dunk your lighter rolls in. This recipe was inspired by California Roll Factory in LA, which had my former roommate Gaby & me sipping every last drop. It’s not really something you want to dunk your caterpillar roll into, but it’s something you can dunk your vegetable rolls. If you have excess, it’s great to pour over some rice to eat the next day with leftover vegetables, or you can drink it straight. If you really want to get fancy, try using it in an oyster shooter with a little sake. Boom, oyster shooter recipe. This recipe is not vegan, but it is vegetarian.

Yes! I took some videos while I was studying abroad two summers ago. I can’t believe it’s already been two summers ago. I CRAI EVERYTIM. Anyway, I put together the random videos using iMovie, edited in Lightroom, & recorded with my Nikon D5100. I accidentally left some videos out, but this was a decent first attempt at “videography”.

If you’re following me on Instagram, you already know that I recently upgraded my Nikon D5100 to the D5300. It’s real-soulmate-kind-of-love at first click! I don’t normally give names to my belongings, but my new baby will be given the wonderful & most beautiful name: Honey Boo Boo. I know, it’s beautiful, I shed tears too. If you’re curious to see how the D5100 compares to the D5300, there’s a website for that.
Josh is inheriting my D5100, so I’m giddy about our future hiking trips & picnics together – perfect opportunities to teach him how to use his new camera. I know that my upgrade wasn’t to a full-frame DSLR or to a better entry-level DSLR, but I feel as someone who isn’t looking to go pro & doesn’t have the disposable income to buy a full-frame DSLR, it’s not really feasible. Also, the swivel screen on the D5300 is a bigger selling point to me (overhead shots, baby!) than a clunkier & nearly similar D7100. My dream full-frame DSLR has a swivel screen, so make it happen Nikon!! We all dream of swivel screens.

Ahh welcome to the wonderful world of sushi, Ciara! 🙂 Hmm, if you didn’t jump right into the raw world as it is a bit daunting for people that prefer their meats cooked thoroughly, I’d suggest trying the Americanized rolls such as the ones you’d find on a “specialties roll” list. All those baked rolls, while full of calories, are delicious & a nice transition. However, if those are too heavy for you, my personal favorite is the caterpillar roll or an eel & avocado roll. Eel is kind of a hideous looking creature, but it has a very different taste from BBQ fish. It’s smokey, a bit crispy, & very flavorful. A lot of people love the crunchy roll, but I’m not a huge fan of tempura in my sushi. That’s just me though, but most people I know loveeee tempura in their sushi.
So to conclude what to try: specialty rolls for the full bodied flavors. Caterpillar or eel & avocado rolls for flavor, but a little lighter. Spicy tuna, although raw, is also a really nice starter roll. I mean, yeah it’s raw, but don’t think about it too much. If you can eat a burger that used to be a cow without any complaints, you shouldn’t be having an issue with putting down some flash frozen & thawed tuna, right? haha. Oh, but with spicy tuna, I’d recommend getting a special roll with spicy tuna in it. A lot of restaurants don’t do that great of a job with spicy tuna, so get a special roll with it so you’ll actually taste something. Anything with scallops = my favorite. Happy sushi favorite hunting!!

I’m so glad you found my ridiculously long comment useful. I received a bunch of bad advice when I studied abroad, so I definitely did not want to pass that on to someone looking to work abroad for a while! Make sure you use cash more than credit & that you bring a purse that has a zipper so you don’t get pick pocketed. I got pick pocketed at the Louvre. Almost had my passport & my expensive earphones stolen, but I caught the girls in time.

Beautiful sushi rolls. I made something similar recently, now I wish I added mushrooms as you did because I think they would have been more complete. I’m all about shiitake now. I tend to put mushrooms in nearly everything I cook because I have this obsession with them haha, but enoki or shiitake make great additions to sushi. Enoki is very light in flavor. I like its texture because it’s reminiscent of a noodle. 😀 Thanks for participating in the giveaway, Daniela!

Swirly thing is Kewpie mayonnaise. You can still enter the giveaway even if you don’t need a domain & give it to someone else. Also, if you win, you could choose a cookbook so you can practice cooking for college.
Yep! You can edit videos in Lightroom using the same presets you would on a photo, except some of the information from the presets don’t transfer over. Not a big deal though!

Thankfully, Blogger is just a non-downloadable platform since it’s primarily on Google so that “infestation” won’t spread :D. WordPress is also easy to deal with; it might seem a lot at the beginning, but baby steps!

Hah, I did the math & I would pretty much need to gain a little over one follower a day on Bloglovin’ to get to my goal, but it looks like that’s not happening. I’m gaining more followers on Instagram than Bloglovin’, but surely you know how Instagramers are…they never look at your blog, they just “like” your photos. Not exactly the best way to reach other people on the internet.
Ugh yes, but people can still run blogger & have a domain point to it. It’s such an inferior blogging platform. You’re so limited in what you can do & it seems that 80% of the blogs I see on Blogger look all the same for girls: glitter, calligraphy, & a mess of a layout &/or bad HTML/CSS.
I think I’ve only seen a few restaurants which allow you to have brown rice in your sushi, but they’re always the health oriented ones like my favorite vegan/vegetarian Vietnamese restaurant (one of the chefs is Japanese). I’ve seen you venture out in making your own sushi, so you should try using brown rice instead of white. Quinoa is also a great alternative, but a little bit more difficult to wrap & cut. The sauce is so fantastic, trust me. That restaurant created a great special sauce.

Old habits die hard, I suppose! Blogger is less complicated than WordPress, so that’s an appeal, also their community is pretty large too. It’s still a really bad blogging system though. I remember having a blogspot account way back when & it confused me. It also was hideous haha.
Sushi isn’t difficult to make at home unless you’re going for really fancy rolls, which certainly take more practice & time. Start with hand rolls because they’re easiest, but I wouldn’t recommend jumping right into sushi making at home if you’ve never had it before.

You can redirect your domain to your Blogger, so it’s not downloadable, but the point is no Blogger because it’s a really bad blogging system.
