Foodie Fridays: Saigon

I’ve had this post queued up for almost a year, but I guess I forgot to post it. Whoops. A couple of summers ago, my family & I went on a trip to Thailand & Vietnam. At the end of our trip, we volunteered with MEMO in Vietnam. We offered scholarships to children to help keep them off the streets & stay in school, raised money for open heart surgery for young children, played with orphans, & gave thousands of strangers free healthcare. It was an amazing experience. We were exhausted, always full, sweaty, itchy from being victimized by mosquitos, & of course, many of us got food poisoning. Yay.

Our trip started off with riches–5 star hotels, white cloth dining, fully functioning air conditioning in our hotel rooms, real showers, deliciously decadent buffets–to rags. There were hotels we stayed at that simply had a drain in the middle of the bathroom floor, a non-existent shower. That’s right. There weren’t showers in some of these hotels, there was simply a shower head attached to a wall next to the toilet. The contrast was an unforgettable experience. I don’t think I’ll ever forget when my MEMO roomie Katie & I were thoroughly entertained by our eclectic neon ceiling lights in a hotel in the middle of nowhere. It dawned on us as we fumbled with the normal lights with the neon ones that the hotel we were staying was the type you’d take your escort/mistress to. It could’ve been worse, but after seeing hair & stains on the bedsheets & pillows, I decided sleeping on the ground was somehow more hygienic. Don’t question my logic, it helped me sleep that night. Nevertheless, we made it out alive, sans contracting an STI too! We all experienced a rollercoaster of emotions, but I think all of us walked away humbled, yet proud of the good we did. We helped positively change people’s lives, many of whom don’t even know our names nor have any ties to us. We were just a bunch of MEMOers helping out complete strangers.

Foodie Fridays: Bangkok + Chiang Mai

Cool fun fact: I was going to combine a huge travel dump of photos from Thailand & Vietnam, but decided it’s too overwhelming. Besides, I can break up my trip into 3 different posts, thereby making it seem like I’m suuUUuuper active, but I just scheduled the posts ahead of time. I didn’t realize how many food photos I actually took in Thailand.

So, I was enrolled in an Emergency Medical Services classes at Boston University for a hot minute & since the classes were so long & I have the attention span of Dory in a classroom setting, I finally ended up editing all of my photos from two summers ago (!!!! – I’m the worst) & last October’s trip to Maine. DROPPED that class – too busy with work & other shenanigans. Probably will retake it in the summer when I’m not as busy. Would be fascinating to ride in an ambulance. It’s too bad the experience won’t be anything like Sirens. That show was hilarious, RIP. Anyway, my family & I went on an amazing trip to Thailand & Vietnam for nearly a month. We vacationed first & then volunteered with MEMO to help out our peoplez. Tears were definitely shed & so many of us got food poisoning, but it was all worth it. Literally shed our blood, sweat, & tears helping the underprivileged in Vietnam. You can scroll down to see my travel photos, but otherwise, here’s a massive food photos dump featuring some of the best eats from Thailand & Vietnam!

Okay, time to shut up: IT’S SLOBBERING TIME. I can’t believe I just made a Marvel pun. What is wrong with me. Puns are the worst form of humor. Halp me.

The Spicy California Sushi Bowl Recipe, Get On It!

It’s finally Spring, but New England kind of doesn’t care about seasons, so it’s already snowed a few times. But listen, I’m not here to talk about the drunk weather patterns of New England, I’m here to share a new recipe I’ve developed in partnership with Trident Seafoods, working with delicious surimi by Louis Kemp. Being a full-time student & working part-time is no easy feat, especially when you also need to find time to feed yourself & not break the bank. This is especially true for any working busybody or mom, so I came up with a recipe that y’all can bang out in 20 minutes or less!

If you’re new around these parts, hi, I’m Tiffany & I’m addicted to sushi. It’s always my default craving, however very expensive, especially when I want to blow my wallet on omakase. I admit that sometimes all I want is just a California roll–invented by Chef Ichiro Mashita who wanted to appease his LA customers who were turned off by the nori (seaweed) in sushi by flipping the rice inside out–because it’s an inexpensive & reasonable alternative to raw fish. This is especially appealing if you’re pregnant or scared of raw fish, so embrace this tasty alternative, y’all! Louis Kemp Crab Delights are made from Alaskan Pollock—a highly sustainable white fish also known as the world’s biggest source of palatable fish, which is commonly used in imitation crab products—and real snow crab. Let me just smash cut to the chase since I know you just HAVE TO KNOW WHAT IT IS I’VE MADE THAT ONLY TAKES 20 MINUTES TO MAKE, HURRY UP. It’s a deconstructed California roll in a bowl! Let me introduce you to my version of a quick & easy California roll fix for busy moms, millennials, people, everyone: the Spicy California Sushi Bowl. Spicy is always optional, but it’s essential in my household because the kick makes life more interesting.

Let’s get on with my previous promise to share Vietnamese recipes, shall we? I bring you a delicious fish & noodle recipe from my peeplez. Cha Ca Thang Long (Grilled Turmeric Fish with Dill) is a very popular northern Vietnamese dish, which has a transliteration of “grilled chopped fish from Thang Long.” While we were sweating in Vietnam’s summer heat, my family went to lunch at a restaurant in Hanoi which only served Cha Ca Thang Long and it was quite excellent. However, I’ve had better in the comforts of my own home (& my mother’s cooking) & at Pho Quang Trung. It’s also comforting knowing you can eat fresh herbs raw without worry of parasites too, so there’s that. This recipe is not meant for those who don’t like seafood or fish sauce, because honey, fish sauce is the soy sauce of Vietnam. In other Asian cuisines, soy sauce is the base for many dishes, but in Vietnam, it’s fish sauce. It’s the secret ingredient my mom uses to make her spaghetti sauce full of umami goodness.

BONUS FUN FACT: Ancient Romans also used fish sauce in their spaghetti too, so don’t you judge my mother for adding her Vietnamese fusion ways into pasta.

Forget Green Eggs & Ham, Let’s Eat Green Pancakes

It’s October, not St. Patrick’s Day, I know, but I couldn’t resist DAVIDsTEA’s limited edition Pumpkin Pie Matcha, which is what made my pancakes green. I bought 2.5 oz of it thinking that would be a good amount & after making these pancakes, I bought more the next day. I couldn’t resist. I’m that person who loves pumpkin, but to be fair, I love all squash! The shaming of people who love pumpkin flavored things has become so mainstream that it’s now trendy to bully someone who loves autumnal flavors. I can’t tell you how many times people come into work, ask about our pumpkin flavored teas, & then apologize for being that person. Stop apologizing!!! I don’t apologize for being obsessed with sushi or chocolate, why should you apologize for being obsessed with an orange seasonal squash?! Madness, I tell you. /pumpkin rant.

Let’s talk more about matcha because not everyone’s heard of it & let’s face it, green is the new black. That’s right all you black tea lovers, green tea is getting its righteous revival–& I’m not even referencing Selena Gomez’s new album, but there, now I’ve plugged it because it’s pop royalty. Green tea was actually the first tea to be discovered, but black tea was made popular by the British, especially since it fared the journey from China to the UK much better than green tea. Green tea has fantastic health benefits (antioxidants, longevity, antibacterial properties, etc) & although it has a significantly shorter shelf-life than black tea (1 year-ish vs. several years), it’s making its comeback. While black tea is the most popular tea and makes up about 80% of the sales in the West, matcha is changing the game. So imagine a whole pound of beautiful Japanese green tea that has been pulverized & that’s what matcha is: powdered green tea. It’s not artificially colored, it’s just that beautiful & green. Not only are you reaping all the benefits of green tea, but you are now actually consuming entire tea leaves. Amazing, right?
