Forget Green Eggs & Ham, Let’s Eat Green Pancakes

It’s October, not St. Patrick’s Day, I know, but I couldn’t resist DAVIDsTEA’s limited edition Pumpkin Pie Matcha, which is what made my pancakes green. I bought 2.5 oz of it thinking that would be a good amount & after making these pancakes, I bought more the next day. I couldn’t resist. I’m that person who loves pumpkin, but to be fair, I love all squash! The shaming of people who love pumpkin flavored things has become so mainstream that it’s now trendy to bully someone who loves autumnal flavors. I can’t tell you how many times people come into work, ask about our pumpkin flavored teas, & then apologize for being that person. Stop apologizing!!! I don’t apologize for being obsessed with sushi or chocolate, why should you apologize for being obsessed with an orange seasonal squash?! Madness, I tell you. /pumpkin rant.

Let’s talk more about matcha because not everyone’s heard of it & let’s face it, green is the new black. That’s right all you black tea lovers, green tea is getting its righteous revival–& I’m not even referencing Selena Gomez’s new album, but there, now I’ve plugged it because it’s pop royalty. Green tea was actually the first tea to be discovered, but black tea was made popular by the British, especially since it fared the journey from China to the UK much better than green tea. Green tea has fantastic health benefits (antioxidants, longevity, antibacterial properties, etc) & although it has a significantly shorter shelf-life than black tea (1 year-ish vs. several years), it’s making its comeback. While black tea is the most popular tea and makes up about 80% of the sales in the West, matcha is changing the game. So imagine a whole pound of beautiful Japanese green tea that has been pulverized & that’s what matcha is: powdered green tea. It’s not artificially colored, it’s just that beautiful & green. Not only are you reaping all the benefits of green tea, but you are now actually consuming entire tea leaves. Amazing, right?

YOU GUYS, it’s pumpkin season again aka my favorite season. Summer? Pft, too hot & also bugs. Spring? The melting snow becomes black mush & it’s gross. The blooming cherry blossoms hang out for like 2 weeks & then they die. Also, bugs are back with vengeance. My point is that it’s pumpkin season – the most important season because pumpkins????. Look, there are a lot of pressing issues in the world, so I’m going to make it clear that I’m being facetious, but I must emphasize with hyperbole how much I love pumpkin season.

This Tea Time Thursdays will not be with a pumpkin tea because it’s embarrassing that the time before my last TTT was on pumpkin tea, so…here’s my attempt to mix it up. But just so you know, DAVIDsTEA has 4 new pumpkin teas. Yep. Get PUMPED y’all! Okay let’s actually talk about what’s in my picture right now.

Colombian Eats, South American Inspired Treats

If you’ve ever taken a little gander at my recipes, you might notice I don’t have very many baked goods & that’s because I’m not much of a baker. You’d think my love for science would translate to baking being my forte, but no recipe = inedible hot messes. In high school, I baked a lot of cakes using a Better Homes & Gardens cookbook my mom had. I loved that I could easily make an apple, carrot, or miscellaneous fruit cake from scratch & I always had friends over to lick my cake pans clean. I didn’t think it was challenging back then, but now? Trying to create the best chocolate chip cookies from scratch or even some elegant French macarons result in failure. I probably jumped the gun trying to tackle the macarons, but I figured since they’re some of the hardest things to bake; if I can’t cut it with those, I’m probably just bad at baking.

On the other hand, cooking comes really natural to me; toss a bunch of complementary ingredients together et voilà, dinner! So, one day I stumbled upon a beautiful recipe for Earl Grey Tea Loaf Cake & I was inspired to use my love for tea in my next baking adventures. While I still haven’t quite perfected the macaron, I have to start with my baking basics: cake. I’ve made a bunch of different breads in the last 3 weeks, but this recipe for my Maté Carrot Cupcakes is one of my favorite things I’ve baked so far. Using my new love for DAVIDsTEA’s Honey Bee maté, I figured it’d be delicious to bake with, but the remaining question was “in what?” Since maté originates in Argentina, should I make an Argentinian inspired cake for the first time or should I make a fancy smancy version of a cake I’ve made before? I went with the latter, because I figured I wasn’t about to infuse maté with 3 different kinds of meat.

There’s a perfectly good explanation for my absence & the belatedness of this Ma Belle Vie / A Day in the Life post: I was in Bogotá, Colombia for a gorgeous destination wedding. Those pictures may actually appear in the gallery before any of my previous photos from the holidays of 2014. DAVIDsTEA ran a really fun promotion on St. Patrick’s Day, which meant its downtown location was really packed. Can you guess what got so many people jammed into the store? Free tea if you’re wearing green. The line was out the door & people were stoked about getting free teas just for wearing a bit of green. It didn’t matter if the customers were homeless, foreigners, non-tea drinkers, long time customers, or randoms strangely demanding for “regular tea”–we carry over 150 teas, so what in the world is “regular” tea??–we served them all! Hot or iced, sweetened or unsweetened, free teas were served. The best part of my job is talking about tea & showing people that it can be for everyone, you just have to give it a chance.

St. Patrick’s Day Recipes: Matcha All Day, Every Day

In my previous post, I mentioned my distaste for purposefully dyed green items for the sake of St. Patrick’s Day. Just as I did last year with naturally vibrant & green vegetables, I present to you some recipes that are green because of their ingredients rather than glowing green because you walked down the “baking” aisle to grab dye. No dyed green beer here, folks, just deliciously healthy green recipes featuring, you guessed it from the title, matcha!

Never heard of it before? Let’s get y’all educated then! Matcha is a type of green tea from Japan & is one of the healthiest teas you can consume because you’re drinking the entire tea leaf. It was first made in China & brought over to Japan by a Chinese Buddhist monk named Eisai. After a hundred years of its introduction, matcha tea ceremonies became a pretty big deal in Japan. So, how is it made? After the tea leaf is plucked, the leaves are steamed & dried. It is sorted meticulously to yield all the best parts of the tea leaf called tencha. The tencha is then pulverized–with care of course–to become matcha, an ultra-fine powdered green tea, naturally green! So, instead of dying your cookies, pasta, or eggs green with propylene glycol, FD&C Yellow 5, FD&C Blue 1, & propylparaben, just add a little bit of matcha, baby!
