In the 2+ decades of my existence, I cannot recall a time when I actually celebrated St. Patrick’s Day. In fact, most of the time I completely forgot it was that time of the year again to wear green to avoid this absurd tradition of getting pinched. While the bars around my campus were stocking up on green beer, I was studying for finals. This year is no exception, however this time, I’m bringing you recipes to celebrate St. Patty’s day even though I’ll still be at home, studying. Today, I present two recipes using bright green colors perfect for any lunch or dinner party you might host for St. Patty’s day or any other celebration. They’re simple, refreshing, & you can make them both in 20 minutes or less. More green recipes will be on the way, but they’ll probably be delayed until after my exam on the 22nd.

After all, this is more of a “food” photo journal than anything else. I’ve added a recipe for Shrimp Spring Rolls & a cocktail I named “Adult Coffee.” The Spring Rolls are actually perfect for summer because they’re light & coldish. Adult Coffee is served chilled & great for the daytime, but not as refreshing as a fruity drink. Nevertheless, they’re both summer delights I hope you’ll enjoy.

10/26/2014: I deleted my recipe for Shrimp Summer (NOT Spring) Rolls a while ago because I thought the photos were incredibly hideous. I will eventually post a proper recipe for Shrimp Summer Rolls alongside a nice vegetarian/vegan fish sauce. I’m still working on perfecting a great recipe for it so that’s why it’s been 2 years & I’ve yet to produce a recipe for it, hah!
After realizing how much I actually like Bailey’s, I came up with a simple & sweet drink to enjoy during the day. Adult Coffee isn’t too complex & was designed to be a quick fix.

Ingredients
- 3 parts Kahlua
- 2 parts Vanilla Almond Milk
- 1 part Bailey’s
- 1 part Frangelico
Instructions
- In a shaker, pour in ice & all of the ingredients. Shake until the cocktail is mixed well. Enjoy responsibly.

This is one of my favorite cocktails of all time & it’s because it’s so sweet that you’d never guess there’s alcohol in it. Italians seriously know how to make some delicious almond liquor! Here’s my recipe of Amaretto Sour with a twist.

Ingredients
- 1 part Disaronno Amaretto Liquor
- 3 parts Sweet & Sour cocktail mix
- 1 tsp of cherry syrup or cherry jam/preserves
- Garnish with cherries or raspberries
Instructions
- Add the cherry syrup in a cup over ice. Next, pour in the Amaretto & then mix the sweet & sour. Garnish with cherries or raspberries.
Notes
- This drink is simultaneously sweet & tangy! To lighten the assault of sweetness on your tastebuds, add 1 part club soda & increase the Disaronno to 1.5 parts. A little fizzy bubbly will certainly add a twist to an original!
