About 3 years ago, my cousin Peter introduced me to this amazing cajun/creole restaurant that’s hidden inside a Vegas hotel frequented by locals & seniors called the Oyster Bar in Palace Station. When I adventured back to Vegas for the 4th of July weekend, I was determined to get everyone to try it. The bar behind the restaurant serves $3 Bloody Mary’s & $0.99 margaritas as Jimmy, Josh, Kelcie, & I learned as we waited 2 hours in line for the most delicious red bowl of seafood goodness that awaited us. It was my third time at the Oyster Bar & everyone else’s first, so I was there on a mission: to figure out all the ingredients they use to make this bowl of perfection.

In the 4 years I’ve been a Pescetarian, I’ve gotten a lot of inquisitive looks & on the more extreme end, antagonized for choosing not to eat land creatures as if I’ve somehow insulted these individuals’ very being because I don’t eat cows. Since the social norm is to consume meat, those of us that have special diets often get harassed for not eating like the rest of society. Not only is it annoying to deal with, it’s incredibly disrespectful to those of us that choose not to eat the popular way society does. If you’re going to try to mock our way of living, you might as well do it intelligently instead of immaturely, e.g., “but meat is so tasty; lol you’re missing out lol more meat for me lol. lol. lol. lolol.” Choosing to cut meat out of my diet is not due to the tastiness of said land creatures, so don’t assume my tastebuds are dysfunctional. I can appreciate a fine plate of beef tartare as much as any bovine connoisseur, but why I choose not to is environmental, ethical, & political. This doesn’t mean that I think consuming seafood is exemplary because it isn’t – I see it as choosing the lesser of two evils, so to speak.
Without even asking me what it is I eat or how often I eat what I eat, people just plunge into the, “well, aren’t you just going to get mercury poisoning?” question as if their consumption of fast food isn’t going to kill them first. Although this post is going to have tons of pictures of fish, it doesn’t mean that I consume seafood everyday. I believe in eating a mostly vegetarian diet & do my best to consume seafood that has low mercury content such as catfish, clams, crab, tilapia, octopus, oysters, & scallops. If you’re considering becoming a Pescetarian or if you’re obsessed with seafood, please make sure you check the mercury levels of your favorite seafood before you think you can consume it all without consequences. As much as I love Chilean Seabass, it’s a fish that’s endangered, so try not to order it. If you want to consume it in the future, you have to make sure it doesn’t die out now. It’s good to mix up what you normally eat with something new. Try having a meat-free day & challenge your culinary skills. You may just delightfully surprise yourself! Okay, now for a huge food dump.

Since I’ve started pro-actively editing my photos in Lightroom, I’ve felt a resurgence for a passion in photography that I felt was absent for quite some time. My photos just felt flat, stagnant, lacked excitement, & were often just so mundane. They became to reflect my own feelings of an ever deteriorating self-worth & happiness, but right around the time when I begun to rely on Lightroom to add more vibrance, saturation, & color curves into my photos, my awkward post-graduate-plateau-of-a-life, my personal life began to pick up. Even the tomato plant I thought would surely wilt in this Californian drought found a way to beat the odds against insects, dry weather, & heat to produce baby San Marzano tomatoes. So, what’s changed? I’m cooking more, eating healthier food, & I’m trying to find a favorable balance between work, reading, catching up with friends, cooking, photographing, volunteering, & the joys of post-processing. In short, I’m doing more with my time, waking up earlier, sleeping at appropriate hours, & eating more power foods. Sometimes when you feel as though you’re in a sinking ship, it helps to look around to remember that you’re not alone. Sometimes you can ask others to help you repair your ship, but most of the time, you have to remember that you’ve got to try to fix your ship yourself.
So, shall I start this post with a recipe first or events? Let’s go with food because I have new recipes!

Although I’m not the type of girl who wants flowers & designer gifts ever, Josh surprised me with my favorite flowers, homemade dinner, & dessert for Valentine’s Day. The flowers have already been thrown out by now, but the half-eaten macarons are still sitting in my fridge. I should probably finish those before they start to harbor a safe haven for mold. Last weekend would be one of the most delightful weekends I had in a while, but every weekend with @CupofJosh is like a spoonful of honey. He made me dinner for Valentine’s Day–we make each other dinner every weekend, he just got me dessert this time–we had a night out on the town for Bryan’s birthday, we got work done together the next day, & to end the weekend, we celebrated our first anniversary as a couple. Without trying to melt your eyeballs out with cheese, I’ll make this quick & to the point: my year with Josh has been nothing short of wonderful & if you asked me, I wouldn’t be able to tell you when the “honeymoon stage” ended because I still feel over the moon because of all the feeelzz for mah boothang. As is evident, my level of literacy diminishes when I have to express the feels.
Last weekend + a new recipe in pictures followed after the jump!

Chai Latte from Makai |
The late UCLA basketball Coach & legend John Wooden once said to, “make everyday your masterpiece,” & if I could pick one day out of my Spring Break that I’d call my masterpiece, it’d probably be Saturday. I awoke early enough to get dressed, grab some poke for Kevin & myself, drove to Long Beach to meet up my friends Kristin & Tempest, had amazing dinner with Vy in Newport Beach, & then drove us to Hollywood to go to PURE nightclub.
